With a natural talent for engaging everyone around the table, Chef Roy mesmerises diners not only with his impressive live cooking skills and playful tricks but also with his witty one-liners that add a personal touch to each meal.
Having joined the team at Benihana in Dubai in 2001 and then relocating to the Abu Dhabi outpost in 2004, this marks Chef Roy's 24th year with Rotana. He attributes his passion for cooking to his mother, who introduced him to the intricacies behind the family's favourite kare-kare (stew) recipe. This sparked his interest in cooking, leading him to experiment with various techniques and eventually enrol in culinary school. His travels to Japan also played a pivotal role in his journey, as it was here that he discovered the meticulous art of filleting fish, which further fuelled his passion for live cooking.

"Today in Japan, most tempura recipes are rooted in the Tokyo style of preparation (also known as Edo). The main reason tempura became popular in Japan was the abundance of seafood.
