Chef spotlight: Chef Alan Snyman

Over the course of his 28-year career as a chef, Alan Snyman has served several heads of state and royalty, including the Queen of Belgium, the King of Greece, Queen Rania of Jordan and Nelson Mandela. His list of diners also includes celebrities like Nicholas Cage, Kate Moss, Robbie Williams, Bryan Adams, Naomi Campbell, Jean Claude Van Damme and The Black-Eyed Peas.


With a degree from Stafford's Cooking School, he honed his skills across several restaurants around the world, including South Africa, Ireland and Saudi Arabia. And he now leads the culinary team at three Rotana hotels, including Pearl Rotana Capital Centre, Centro Capital Centre and Capital Centre Arjaan by Rotana.


Here, Chef Alan tells us more about his signature creations at The Warehouse Wine & Tapas Bar. Over to the chef...


To start with: Smoked hummus dip

"Since moving to the UAE, I fell in love with the way hummus is prepared in this country. At The Warehouse Wine & Tapas Bar, we gave this classic a twist by adding a smoked element to enhance the flavour of the hummus. It creates a subtle surprise that pleases the palate and adds an extra layer to the dish."


The main attraction: BBQ beef short ribs

"Hailing from South Africa, our cuisine is very much focused on red meats and I am quite fond of barbecues. In this dish, the beef short ribs are cooked at a slow temperature for a long period of time, and this is the technique to follow to create melt-in-your-mouth, tender beef that is rich in taste. Its natural flavours are then enhanced with a decadent barbecue glaze."

The big finish: Jack D-elicious split

"I love our take on the classic banana split. This special dessert has been upgraded and modified to be a delicious end to the meal, especially when shared. The combination of whiskey-soaked bananas and spiked caramel makes this a winner on a night out at The Warehouse Wine & Tapas Bar."
